Ranchero Cornbake is an moderately easy dinner. Made with 8 1/2 oz. corn muffin mix, 2 beaten eggs, 1 c. sour cream, 12 oz. corn with peppers, drained and 1 c. shredded cheddar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine muffin mix and dressing mix.
Stir in eggs, butter and sour cream until moistened.
Add everything else except cheese, stirring until combined.
Pour into a 9-inch dish.
