Raisin Pie
Raisin Pie is an moderately easy dinner. Made with 1 c. raisins, 2 c. water, 4 tbsp. tapioca, 1/2 c. sugar and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Add raisins to water and cook 30 minutes, drain.
Add enough water to juice to make 2 cups.
Combine tapioca, sugar, salt and liquid in saucepan and mix well.
Bring mixture quickly to a full boil over direct heat, stirring constantly and pour small amount of slightly beaten egg, stirring vigorously.
Return to saucepan and bring just to a boil.
Remove from fire.
Add butter, lemon juice and rind to raisin mixture.
Cool slightly before filling shell.
Chill if desired and cover with whipped cream.
