Raisin-Cheese Pie is an moderately easy dinner. Made with 1/2 c. sugar, 1/8 tsp. salt, 4 tbsp. cornstarch, 1 tbsp. margarine and 1 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine sugar and cornstarch in a saucepan and blend well.

Add raisins and water.

Stir and cook over medium heat until thick and clear.

Remove from heat and add salt, margarine, grated orange rind and juice from the orange, Angostura aromatic Bitters and lemon juice.

Cool filling, then pour into 8-inch uncooked pastry shell.

Arrange the cheese slices or grated cheese over the filling and cover with top crust.

Seal and crimp edges of pie.

Bake in a hot oven at 450Β° for 15 to 20 minutes.

Should be nicely browned. Serves 6.
