Raised Cornmeal Muffins
Raised Cornmeal Muffins is an moderately easy dinner. Made with 1 pkg. yeast, 1/4 c. lukewarm water, 1 c. cornmeal, 2 c. scalded milk and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Soften yeast in water; pour milk over cornmeal, salt, sugar and shortening.
Beat in eggs and 2 cups flour.
Add yeast and mix well.
Stir in flour.
Cover and let rise until double in bulk, about 1 hour.
Stir down; spoon into greased muffin cups.
Fill about 1/3 full.
Cover and let rise until double in bulk.
Bake 15 to 20 minutes at 400Β°.
Brush with melted butter.
Makes about 2 dozen.
