Radhaballav
Radhaballav is a Bengali dal-stuffed fried bread, closer to a festive kachori than a dessert. A spiced urad dal paste is sealed inside soft dough, rolled carefully, and fried until puffed and golden for serving with aloo dum or chutney.

Rub ghee and salt into the flour, then add water to make a soft dough and rest it.
Grind soaked urad dal with ginger, fennel, cumin, asafoetida, chile, and salt into a thick paste.
Cook the dal paste in a little oil until dry and fragrant, then cool.
Stuff small dough balls with the dal filling and roll gently into discs.
Fry until puffed and golden, then serve hot with potato curry or chutney.
