Quick Artichoke Pasta Salad
Quick Artichoke Pasta Salad is an moderately easy dinner. Made with 4 oz. (1 c. dry) macaroni or twisty noodles or shells, 1 (6 oz.) jar marinated artichoke hearts, 1/4 lb. mushrooms, quartered, 1 c. cherry tomatoes, halved and 1 c. medium pitted ripe olives, this recipe delivers authentic, satisfying flavors. Cook pasta according to package directions.
Drain and rinse with cold water (drain again).
In a large bowl, add pasta, artichokes and marinade, mushrooms, tomatoes, olives, parsley, and basil.
Toss gently.
Cover and refrigerate at least 2 hours. Before serving, season to taste with salt and pepper.
