Pumpkin Pie(Grandpa's Favorite)
Pumpkin Pie(Grandpa'S Favorite) is an impressive dinner. Made with 2 c. libby's canned pumpkin (16 oz.), 2 c. sugar, 2 tbsp. cornstarch, 1 tsp. ginger and 5 egg yolks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Blend all ingredients together except egg whites, cream of tartar and pie shells.
Beat egg whites until stiff, then add cream of tartar.
Beat until blended, about 1 minute.
Fold egg whites into pumpkin mixture until well blended.
Do not beat.
Pour pie mixture into unbaked shells.
Bake at 400° for 10 minutes, then turn down to 350° and bake for 45 minutes.
Yields 2 pies.
