Pumpkin Pie
Pumpkin Pie is an moderately easy dinner. Made with 1 (9-inch) pastry shell, 1 c. pumpkin, mashed and drained, 1 c. sugar, 1/2 tsp. salt and 1/4 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix pumpkin, sugar, salt, spices, egg yolks, flour and cornstarch.
Scald milk and add to mixture.
Beat egg whites until stiff.
Gently fold mixture into beaten egg whites.
Pour into 9-inch pastry shell.
Bake at 425° for 10 minutes.
Lower temperature to 350° and bake 35 to 40 minutes longer or until silver knife blade inserted into center of filling comes out clean.
