Pumpkin Cider Bread
Pumpkin Cider Bread is an moderately easy dinner. Made with 1 qt. apple cider, 1/2 c. maple syrup, 1/2 c. butter, 1 c. pumpkin and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Warm cider, butter, syrup, pumpkin and salt in a large pot until butter melts.
When mixture is lukewarm, add yeast; let rest 5 minutes.
Stir in flour, 2 cups at a time (add the cornmeal) until dough is thick and sticky.
Knead dough, adding extra flour until dough feels firm.
Place dough into a greased bowl.
Let rise 1 hour in a warm place.
Punch down; knead briefly and divide into 3 loaves.
Place loaves in greased pans.
Let rise 45 minutes.
