Pumpkin Cake Roll
Pumpkin Cake Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 1 tsp. lemon juice, 2/3 c. pumpkin and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Beat eggs for 5 minutes on high.
Add sugar, lemon juice and pumpkin.
Beat well.
Add flour, baking powder, cinnamon, salt, ginger and nutmeg.
Pour into wax paper lined jelly roll pan and cover with 1 cup of chopped pecans.
Bake in preheated 375Β° oven for 15 minutes.
Remove from pan immediately and roll in powdered sugared towel and let cool.
Be sure to roll towel and cake together.
When cooled, unroll and spread with filling.
