Pumpkin Cake Roll
Pumpkin Cake Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. baking soda and 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Grease cookie sheet, 10 x 15 x 2-inch.
Line with wax paper. Grease paper.
Preheat oven to 350°.
Beat until creamy the eggs and sugar.
Add pumpkin, soda, cinnamon and flour.
Pour batter on cookie sheet.
Sprinkle with chopped nuts if desired.
Bake at 350° for 15 minutes.
Sprinkle powdered sugar on tea towel.
Remove cake from oven and flip on towel.
Remove wax paper.
Roll in log shape and set aside to cool for 1 1/2 hours.
