Potato Soup is an moderately easy dinner. Made with 3 potatoes, peeled, 1 qt. milk, 3 slices onion, 2 tbsp. butter and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook potatoes in salt water.

When soft, rub through a strainer.

There should be 2 1/2 cups of scalded milk with onion. Remove the onion and slowly whisk milk into the potatoes.

Melt half of the butter and add the flour, salt, celery salt, pepper and cayenne.

Stir well mixed, then stir into the hot soup.

Boil for 1 minute.

Strain and add the remaining butter.

Sprinkle with parsley.
