Potato Soup
Potato Soup is an moderately easy dinner. Made with 1 tbsp. soy margarine, 4 medium potatoes, 1 c. soy milk, 1 medium zucchini, shredded and 1/4 tsp. vegie-sal, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Melt margarine.
Add onion.
Cook and stir.
Peel and dice potatoes.
Cook with onion 2 minutes.
Add water and bring to boil. Cook 10 minutes.
Remove half of potatoes and mash (blender).
Add milk.
Return to saucepan.
Add carrots, zucchini and green pepper. Simmer.
Stir in salt, pepper and parsley.
Cook until all vegetables are tender.
