Potato Skin Appetizer
Potato Skin Appetizer is an moderately easy dinner. Made with 4 large baking potatoes, oil, 2 tbsp. butter or margarine, 1/2 c. shredded cheddar cheese and salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Scrub potatoes; rub with oil.
Prick potatoes with fork and bake at 375Β° for 1 hour until tender.
Cool slightly.
Cut potatoes into halves lengthwise.
Scoop out interiors.
With scissors, cut skins lengthwise into strips.
Brush insides of skins with butter.
Sprinkle with cheese, salt and pepper.
Place on ovenproof platter.
Preheat broiler.
Slip skins under heat until cheese melts.
