Potato Salad
Potato Salad is an moderately easy dinner. Made with 1 (5 lb.) bag potatoes, 4 eggs, 2 tsp. salt, 1 medium onion, chopped and 1 small bell pepper, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel and quarter the potatoes.
Cover with water and add 1 teaspoon of salt.
Cook until tender.
Boil eggs.
Let cool, then mash eggs.
When potatoes are done, drain water.
Add mashed eggs, onion, bell pepper, celery, sweet pickle relish, 1 cup of mayonnaise, 3 tablespoons of mustard, 1 teaspoon of salt and 1/2 teaspoon of pepper.
Mix well and chill.
