Potato Salad
Potato Salad is an moderately easy dinner. Made with 2 pounds potatoes (6 medium), 1 1/2 cup mayonnaise or salad dressing, 1 tbsp. vinegar, 1 tbsp. prepared mustard and 1 tsp. salt (kosher), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Wash potatoes, heat water and add salt
(1/2 tsp. to one cup water.)
Add potatoes, cover and boil until done.
Leave peels on. When done, cool and remove peels and eyes.
Cut into cubes.
Mix mayonnaise, vinegar, mustard, salt and pepper in a 4 quart glass bowl.
Add potatoes, celery, and onions.
Add eggs.
Cover and refrigerate for at least 4 hours.
Serves 10.
