Potato Nachos
Potato Nachos is an moderately easy dinner. Made with 2 (8 to 10 oz. each) washington russet potatoes, 1 tbsp. vegetable oil, salt and pepper, 1 1/2 c. shredded cheddar cheese and 1 medium tomato, diced, this recipe delivers authentic, satisfying flavors. Slice potatoes 1/4-inch thick.
Rinse and drain thoroughly on paper towels.
Brush baking sheet and potato slices with oil. Place slices in a single layer on baking sheet.
Season with salt and pepper.
Bake at 425Β° for 10 minutes.
Top each slice with cheese, tomato, chilies, olives and green onions.
Bake 5 to 7 minutes longer, until potatoes are tender and cheese is melted. Serve with salsa, sour cream and guacamole.
