Potato Lovers' Casserole
Potato Lovers' Casserole is an moderately easy dinner. Made with 2 lb. frozen hash brown potatoes, 1 c. butter, melted, 1/2 pt. sour cream, 1/2 c. chopped onion and 2 c. grated cheddar cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 350Β°.
Place frozen hash brown potatoes in a greased 9 x 13-inch pan.
Melt 1/2 cup of butter and pour over potatoes.
Set aside.
In a 2-quart bowl, mix sour cream, onion, cheese, soup, salt and black pepper.
Pour over potatoes and mix well.
Combine 2 cups of crushed cornflakes and the other 1/2 cup melted butter.
Spread over potato mixture.
Bake for 1 hour. Yield
9 cups.
Makes 18 servings (1/2 cup each).
