Potato Curry
Potato Curry is an moderately easy dinner. Made with 4 large size potatoes, 2 medium onions, chopped, 2 hot green peppers (finger), cut into pieces, 1 tsp. mustard seed and 2 tsp. urad dhal, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut potatoes into halves; boil them for 15 minutes, or pressure cook (do not overcook).
Remove skin from potatoes.
Cut into small (1/3-inch) pieces.
Heat oil in frying pan.
Put mustard seed and urad dhal in oil.
Fry urad dhal until brown (30 seconds).
Brown cut onions.
Add green peppers, tomatoes and potatoes.
Add turmeric powder and salt to taste.
Stir entire ingredients; simmer for 2 minutes.
Ready to serve.
