Potato Chocolate Cake
Potato Chocolate Cake is an moderately easy dinner. Made with 1 c. hot, unseasoned mashed potatoes, 2 c. sugar, 2/3 c. shortening, 4 eggs (unbeaten) and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350Β°.
Line bottoms of 2 (9-inch) layer pans or a 13 x 9 x 2-inch oblong pan with waxed paper cut to fit.
Prepare mashed potatoes.
(Easy way is to follow directions for 2 servings on package mashed potatoes.) Measure and set aside.
Gradually beat sugar into shortening until fluffy.
Add eggs, one at a time, beating well.
Add vanilla and potatoes.
Add sifted dry ingredients and milk alternately, about 1/4 of each at a time, beating smooth.
Stir in walnuts.
