Potato Chip Munchies is an moderately easy dinner. Made with 1 c. butter or margarine, 1/2 c. sugar, 1 tsp. vanilla, 1 3/4 c. all-purpose flour and 1 c. crushed potato chips (5 c. uncrushed), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Heat oven to 350Β°.
In a large bowl, beat butter with electric mixer on medium speed until softened (30 seconds).
Add 1/2 sugar and vanilla.
Beat until fluffy.
Mix on low speed, gradually adding flour and potato chips.
Beat until well mixed.
Drop by rounded teaspoonfuls 2 inches apart on ungreased cookie sheet. Flatten with a fork that is dipped in sugar.
Bake 12 to 15 minutes until golden.
Lift onto cooling rack.
