Potato Cheese Soup
Potato Cheese Soup is an moderately easy dinner. Made with 3 medium potatoes, 1 small onion, finely chopped, 1 c. boiling, lightly salted water, milk and 3 tbsp. oleo, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Wash, pare and cut potatoes into small pieces.
In 2-quart saucepan, bring water to a boil and add potatoes and onion. Cover and cook over low heat until tender.
Mash slightly.
Do not drain.
Measure the potato mixture and add enough milk to make 5 cups.
Combine melted oleo, flour and parsley and stir into potato mixture.
Cook and stir until thickens.
Season with salt and pepper.
Remove from heat and add cheese.
