Potato Cheese Soup
Potato Cheese Soup is an moderately easy dinner. Made with 2 very large potatoes, diced, 1 small onion, diced, 2/3 c. velveeta cheese, 4 c. whole milk and 2 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook potato and onion until very tender in the smallest amount of water possible.
Watch closely.
Do not let it burn.
Cut Velveeta cheese into small pieces and add along with milk.
Add to potato and onion.
Simmer for 5 minutes, but do not boil.
Salt and pepper to taste.
