Potato Casserole

Made with 5 lb. potatoes, peeled, 3 tbsp. margarine, 1 1/2 c. low-fat milk, 2 c. low-fat small-curd cottage cheese and 1 medium onion, finely chopped, this recipe delivers authentic, satisfying flavors. Boil and drain potatoes.
Mash with margarine and milk until fluffy.
Add onions, cottage cheese, salt and pepper; mix well. Put in 3-quart greased casserole dish.
