Potato Casserole
Potato Casserole is an moderately easy dinner. Made with 8 medium potatoes, peeled, boiled, cooled and sliced (should have 5 c.), 1/4 c. butter or oleo, 1 (16 oz.) carton sour cream, 1 medium onion, chopped and 1 green or red pepper, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute onion and pepper in 1/4 cup butter.
Add cheese and melt.
Add cream of chicken soup.
Remove from heat.
Add sour cream.
Mix in the potatoes.
Do not beat.
Top with the corn flake crumbs, mixed with 2 tablespoons oleo.
Bake in a 350Β° oven for 45 minutes.
