Potato Cakes is an easy dinner. Made with leftover mashed potatoes, 1 egg, 1 small onion, oil or shortening and 1 1/2 tsp. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In a large bowl, stir together mashed potatoes, egg, onion and flour.
After mixing is completed, heat oil in a large heavy skillet. When oil is hot, drop potato mixture into hot oil. Brown well, using medium heat.
Turn and brown well.
