Potato Cake
Potato Cake is an impressive dinner. Made with 2 c. sugar, 1 c. butter, 1 c. irish potatoes, creamed, 1/2 c. sweet milk and 2 c. flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream butter and sugar; add the well beaten eggs; mix well, then add the creamed potatoes.
Mix well.
In a separate bowl, sift together flour, baking powder, salt, cocoa, cloves, allspice, nutmeg and cinnamon.
Add this sifted mixture and milk a little at a time to the mixture of butter, sugar and eggs.
After this mixture is mixed well, add the nuts and cherries.
Bake for approximately 1 hour at 375Β°.
Test with toothpick to determine when done.
This cake can be made in a loaf or in layers (I prefer layers).
