Potato Bread
Potato Bread is an moderately easy dinner. Made with 1 medium size potato, 2 pkg. yeast, 1 1/2 tsp. salt, 2 eggs, beaten and 1 1/2 c. warm water, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil and mash potato.
Dissolve yeast in warm water (can use potato water).
Add sugar, salt, shortening, eggs and mashed potato.
Add 2 cups flour and beat.
Add the rest of the flour. Use some flour on board and knead.
Place in a greased bowl and let rise.
Knead down once and place in refrigerator until ready to use.
Bake at 350Β°.
