Potato Bread
Potato Bread is an moderately easy dinner. Made with 1 medium potato, peeled and cubed, 1 1/2 c. water, 2 pkg. active dry yeast, 6 to 6 1/2 c. all-purpose flour or may use cornmeal and 3 tbsp. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Heat oven to 375°.
In a medium saucepan, cook potato in the water about 12 minutes or until tender; do not drain.
Cool cubed potato mixture to 110° to 115°.
Set aside 1/2 cup of the cooking liquid.
Mash potato in the remaining liquid.
Add enough warm water to make 2 cups mashed potato mixture.
