Potato Bacon Salad
Potato Bacon Salad is an moderately easy dinner. Made with 1 1/2 lb. red potatoes, washed and quartered, 1/4 c. vegetable oil, 1/4 c. red wine vinegar, salt and pepper and 1/2 lb. bacon, cooked crisp, drained and crumbled, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil potatoes until just tender, about 15 minutes.
Drain and put in large bowl.
Cut into bite size pieces.
In measuring cup, whisk oil and vinegar and add salt and pepper.
Pour over potatoes and toss.
Let sit for 30 minutes and add bacon, eggs, onion, scallions and relish.
Toss gently until well mixed.
Chill covered.
Serves 4.
