Possum and Sweet Potatoes
Possum And Sweet Potatoes is an easy dinner. Made with 1 lb. possum or 2 lb. short ribs, 5 or 6 baked sweet taters and sugar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Turn possum loose and get the short ribs ready!
Boil them until tender.
Wash and put taters in pan, then in a hot 350° oven for about 1 hour or until they are soft.
Peel skins of taters and put in baking dish with ribs.
Put a small amount of sugar on potatoes and about a cup of broth in dish.
Bake in a 300° oven. This is good too, if you use backbone instead of ribs.
