Posh Squash
Posh Squash is an moderately easy dinner. Made with 2 lb. yellow squash, 1 c. mayonnaise, 1 c. grated parmesan cheese, 1 small onion, chopped and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook squash in boiling salt water to cover for 10 to 15 minutes or until tender.
Drain and cool slightly.
Combine mayo, cheese, onion, eggs, salt and pepper.
Then stir in squash gently. Put mixture into a lightly greased 1 1/2-quart casserole dish. Combine bread crumbs and butter and spoon over squash.
Bake at 350Β° for 30 minutes.
Makes 6 servings.
