Trim fat from chops.
Brown chops slowly; drain off excess grease.
Spread each chop with mustard, then with brown sugar, salt and pepper.
Top chops with lemon slices.
Pour Sauterne over meat.
Cover and cook slowly until tender, 50 to 60 minutes. Remove meat to hot plate and pour sauce over meat.
