Poor Boy's Strawberry Shortcake
Poor Boy'S Strawberry Shortcake is an moderately easy dinner. Made with 1/2 c. shortening, 3 c. packaged buttermilk pancake mix, 1 egg, beaten, 2 (8 oz.) cartons strawberry yogurt and 1/3 c. packed brown sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease lightly and flour 2 (8 x 1 1/2-inch) round baking pans. Set aside.
In large mixing bowl, cut shortening into pancake mix until mixture resembles coarse crumbs.
Combine eggs, 1 carton of yogurt, brown sugar and milk.
Add to dry ingredients, stirring until moistened.
Turn mixture into prepared pans.
Bake in 375Β° oven for 25 minutes or until done.
Cool 10 minutes on wire racks.
