Boil cabbage, removing each leaf just as it becomes tender. Drain leaves.

Mix ground beef, rice and onion.

Salt and pepper to taste.

Line bottom of 4 1/2-quart pot with sauerkraut.

Place 3 to 4 tablespoons of meat mixture in center of leaf and roll, bringing in sides of leaf as you roll.

Arrange cabbage rolls in pot, stacking as you go.

Place remaining leaves over top.

Pour V-8 juice over top.

Simmer on low for 3 to 4 hours.
