Polish Cabbage Soup
Polish Cabbage Soup is an moderately easy soup you can prepare in about 2 hours 20 minutes. Made with small head cabbage, cored and shredded, (28 oz.) can tomatoes, undrained, c. tomato purée, qt. water and . butter, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine cabbage, tomatoes, purée, water, butter, juice, sugar and salt large kettle.
Cover and simmer for 45 minutes. Beat egg yolks and sour cream in a small bowl. Gradually add 1 cup hot soup into egg mixture. Stir contents of bowl gradually into soup kettle.
Remove from heat and stir constantly to prevent eggs from curdling.
Makes 10 to 12 servings.
