Pioneers Johnny Cake is an moderately easy dinner. Made with 2 c. corn meal, 1 c. flour, 1 tsp. salt, 3 tbsp. sugar and 3 tbsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Sift first five ingredients together (sifting several times makes it better).
Beat eggs into milk and water and add butter. Stir liquid into dry mixture; add more liquid if needed.
Bake in muffin pans or skillet for 20 minutes at 400Β°.
Makes one dozen large muffins.
