Pinto Fiesta Cake
Pinto Fiesta Cake is an impressive dessert you can prepare in about 1 hour 58 minutes. Made with c. mashed unseasoned pinto beans, c. sugar, c. butter, c. egg substitute and c. unsifted flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cream together sugar and butter.
Add eggs and mix well.
Add beans and mix well.
Sift together flour, soda, salt, cinnamon, cloves and allspice.
Add dry ingredients to bean mixture and mix well.
Add apples, raisins, nuts and vanilla.
Spoon mixture into well-greased 10-inch tube pan (or 2 loaf pans).
Bake at 375Β° for 45 minutes (check for doneness with toothpick).
Cool in pan about 20 minutes and remove from pan.
Melt jelly and spoon over the top. Decorate with walnut halves, if desired.
