Soak dried beans overnight
Rinse well

Add onion, vinegar, and oil
Simmer 3 hours or longer
Add carrots and potatoes
Simmer until all is cooked, then add salt & pepper to taste. 20 minutes before serving, gently slip in eggs to poach. (1 egg per person.)
