Pinon De Amarillos
Pinon De Amarillos is an impressive dinner. Made with 1 lb. ground beef, 6 yellow plantains, 8 oz. green beans, cooked, 8 oz. cheddar cheese, finely cut or grated and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Stir-fry garlic in oil.
Add peppers, onion, coriander, cilantro, tomato sauce and sazon.
Add meat and season well; cook 30 minutes, stirring occasionally.
Fry plantains, cut in pieces. Grease an 8 x 12 x 2-inch pan and place plantains in bottom.
Add meat mixture, spread evenly and press down.
Add grated cheese, then green beans.
Make another layer of plantains.
Beat egg whites; add yolks to sugar.
Cover the dish with this meringue. Bake at 325Β° for 15 minutes.
To brown, place under broiler for 5 minutes.
Cut and eat.
Makes about 10 portions.
