Pineapple Upside-Down Cake

Beat egg yolks; add sugar and pineapple juice.
Sift flour, baking soda and salt.
Add to first mixture.
Beat egg whites and fold in.
In a large iron skillet, melt butter and add brown sugar.
Place pineapple slices in skillet for the top of cake and place cherry in center of each pineapple slice.
Pour batter over pineapple.
Bake in a preheated oven at 350Β° for 25 to 30 minutes.
