Pineapple Upside-Down Cake
Pineapple Upside-Down Cake is an moderately easy dinner. Made with 1/2 c. butter or oleo, 1 c. brown sugar, 6 or 8 slices drained pineapple, 6 or 8 maraschino cherry halves and 3 egg yolks, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt butter in heavy skillet.
Add sugar and mix well.
Lay slices of pineapple in pattern in bottom of a skillet or sugar cake pan.
Put cherry halves in center of each pineapple slice. Decorate with pecan pieces between slices.
Beat egg yolks.
Add sugar and pineapple juice; mix well.
Sift flour and baking powder together.
Stir into egg mixture.
Fold egg whites.
Spoon over pineapple in skillet.
Bake at 350Β° for 45 minutes to 1 hour or until done.
