Pineapple Surprise
Pineapple Surprise is an moderately easy dinner. Made with 1 lb. vanilla wafers, 1/2 c. butter, 2 eggs, 1 1/2 c. powdered sugar and 1 (no. 2) can pineapple, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Roll vanilla wafers into fine crumbs.
Divide crumbs into 3 parts.
Put 1/3 in bottom of square dish.
Beat butter, eggs and powdered sugar until creamy.
Pour over crumb layer.
On top of this mixture, place another layer of crumbs.
Whip 1 pint of cream into can of pineapple.
Pour cream and pineapple over second layer of crumbs.
Top with portion of crumbs.
Freeze overnight.
Whipped cream may be used for topping.
