Pineapple Muffins
Pineapple Muffins is an moderately easy dinner. Made with 2 1/2 c. oat bran cereal, 1/4 c. brown sugar, 1 tbsp. baking powder, 1/2 c. evaporated skim milk (or skim milk) and 8 oz. crushed pineapple with juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 425Β°.
Mix oat bran cereal, brown sugar and baking powder in large bowl.
Mix skim milk, first can of pineapple, eggs and oil in bowl or blender.
Then add to dry ingredients.
Drain second can of pineapple and add to mixture. Line muffin pan with paper baking cups and fill with batter.
Bake 17 minutes.
Makes 12 muffins.
