Pineapple Monte Cristo
Pineapple Monte Cristo is an moderately easy dinner. Made with 12 slices day old bread, 1/2 c. margarine or butter, melted, 4 slices cooked ham (1/8-inch thick), 1 (15 1/2 oz.) can sliced pineapple, drained and 4 slices swiss cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Trim crusts from bread.
Brush margarine on both sides of each slice.
Top four slices ham and second slice of bread.
Arrange pineapple and cheese slices on top of each; cover with third slice of bread.
Secure with toothpicks; cut in half diagonally. Combine eggs, milk and salt.
Dip each half of sandwich in egg mixture.
Brown on all sides in skillet, adding more margarine, if needed.
