Pineapple Chutney
Pineapple Chutney is an easy dinner. Made with 1 cucumber, 1 (15 oz.) can crushed pineapple (in natural juice), 1 tsp. cornstarch, 1 c. dry-roasted cashews and 1 tbsp. chopped fresh mint, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel, seed and dice cucumber.
Add cucumber and pineapple with juice to a 4 cup glass measure.
Microwave on High 5 to 7 minutes.
Cornstarch
1 tablespoon water until smooth. Stir into pineapple mixture.
Microwave on High 2 to 3 minutes, until mixture thickens.
Coarsely chop nuts; stir nuts and mint into chutney. with poultry or pork.
