Preheat oven to 350Β°.
Grease 8 1/2 x 4 1/2-inch loaf pan. Sift flour with baking soda and salt into mixing bowl.
Stir in sugar substitute.
Combine egg, oil and vanilla.
Add to dry ingredients, along with pineapple, stirring just until ingredients are moistened.
Fold in raisins.
Spread evenly in pan and bake 45 minutes or until done.
For easier slicing, store overnight in refrigerator before serving.
