Pineapple Baked Beans
Pineapple Baked Beans is an moderately easy dinner. Made with 1-1/2 c. pinto beans, 1/2 tsp. cumin seeds, 1 bay leaf, 1 tsp. salt and 3 tbsp. oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Soak beans overnight.
Cook beans with salt, bay leaf and cumin.
Simmer in a tightly covered pot for about 2 hours.
Add oil and continue cooking until beans are tender.
Add more water if necessary.
Add other ingredients.
Salt and pepper to taste. Pour mixture into a casserole dish and place in a 275 degree oven for one hour or so.
Can be made ahead and can be frozen.
