Pikelets
Pikelets is an moderately easy dinner. Made with 1 egg (60 grams), 4 tbsp. sugar, 1 c. self-rising flour*, 3/4 c. milk and 1/4 tsp. bicarbonate of soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat egg and sugar.
Add flour alternately with milk in which bicarbonate of soda has been dissolved.
Add melted butter.
Have ready a hot greased pan or griddle iron.
Put mixture in dessertspoonfuls in pan or on griddle iron.
Brown both sides, lift out and drain on absorbent paper.
Serve topped with jam and whipped cream for morning or afternoon tea.
