Pickled Okra
Pickled Okra is an moderately easy dinner. Made with 1 clove garlic (per pint), 1 pod hot pepper (per pint), 1 tsp. dill seed (per pint), 1 qt. vinegar and 1 c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Put garlic and pepper in bottom of hot pint jars.
Remove part of steam from okra pods.
A part of stem must be left on.
Pack okra firmly in jars; add dill seed.
Use small pods of okra.
Bring vinegar, water and salt to boil; simmer for five minutes.
Pour over okra and seal jars.
Solution makes about 6 pints.
